Preheat the oven to 425°F (220°C).
Wash the potatoes and pat them dry. Using a sharp knife, carefully make vertical cuts into each potato, going about 75% of the way through. Take care not to cut all the way through the potato. The cuts should be about ⅛-inch to ¼-inch apart.
In a small bowl, combine the minced garlic, melted butter, salt, and pepper. Brush the mixture all over the potatoes, making sure to get inside the cuts.
Place the potatoes on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with the minced herbs and grated Parmesan cheese.
Bake in the preheated oven for about 45-55 minutes, or until the potatoes are golden brown and crispy.
Remove from the oven and let cool for a few minutes before serving. Enjoy!
