Preheat your oven to 400F.
Mix your cream cheese, mozzarella, tomatoes and spinach. Set aside.
Flatten out your ground chicken into a thin circle between greased parchment paper and cling wrap. Take off the cling wrap, add your filling and fold over using the parchment paper.
Brush with egg wash & coat with Parmesan.
Flip onto another piece of parchment paper, add more egg wash and Parmesan.
Bake for 20 mins & enjoy!
