Take chicken out of fridge 30 minutes before cooking.
Fill a pot with enough water to fully submerge chicken (at least 2 inches above).
Add aromatics if using, bring water to a full boil.
Add chicken, return to boil, cover, and immediately remove from heat.
Let sit covered for 20 minutes (up to 45 mins okay).
Remove, slice across the grain, and serve or store.
