Peel and wash the potatoes
Slice the potatoes to about ⅛ inch or 2.5 mm thick
Place the sliced potatoes in a bowl of water to prevent oxidation
Blanch the potatoes in boiling water until fork tender
Strain the potatoes
Lay the potatoes flat on a dehydrator screen
Dehydrate the potatoes at 125° F/52° C for 8 to 10 hours
Allow the potatoes to cool and store in a large container
