Dehydrate Potatoes
  1. Peel and wash the potatoes

  2. Slice the potatoes to about ⅛ inch or 2.5 mm thick

  3. Place the sliced potatoes in a bowl of water to prevent oxidation

  4. Blanch the potatoes in boiling water until fork tender

  5. Strain the potatoes

  6. Lay the potatoes flat on a dehydrator screen

  7. Dehydrate the potatoes at 125° F/52° C for 8 to 10 hours

  8. Allow the potatoes to cool and store in a large container
