Vietnamese Fish Sauce Chicken Wings
  1. Marinate the chicken wings with fish sauce, garlic powder, onion powder, ground pepper, and msg (optional) for 30 minutes.

  2. Shake the marinated wings with cornstarch in a ziplock bag.

  3. Make the sauce by mixing sugar, fish sauce, water, garlic powder, onion powder, msg, and ground pepper.

  4. In a saucepan, cook the garlic and chili flakes in oil until the garlic is golden, then add the sauce mixture and cook until slightly thickened.

  5. Remove from heat, then add the green onions.

  6. Oil the frying basket, place the drumettes on the bottom and the mid wings on top.

  7. Preheat the fryer to 400°F and fry the wings for 5 minutes, then stir and continue frying for 15-20 minutes.

  8. Toss the fried wings with the sauce before serving, or serve the sauce on the side to keep the wings crispy.
