Mango Chicken Curry
  1. Add chicken breast chunks to a bowl and season with garlic powder, salt and pepper

  2. Heat up coconut oil in a large frying pan and fry chicken over medium heat until golden and cooked through

  3. Remove chicken and set aside

  4. To the same pan add the garlic, ginger and curry paste and fry for a minute

  5. Add the coconut milk to the pan

  6. Blend the mango and beans until smooth

  7. Add blended mango and beans to the pan with 100ml water

  8. Add chicken back in and serve with rice
