Add all marinade ingredients to a food processor and blend until smooth. Pour over chicken and marinate at least 30 minutes (best 2–4 hours).
Cook chicken in a skillet over medium-high heat until slightly charred and caramelized.
Blend together all honey chipotle sauce ingredients until smooth. Add water if needed to thin.
Add cheese to one side of a tortilla, chicken, more cheese, then fold over.
Cook in a pan with a little avocado oil until golden and crispy. Serve with the honey chipotle sauce.
