Spicy Cauliflower Bao
  1. Mix 2 ½ cups flour, ½ tsp baking powder, and a pinch of salt

  2. Whisk together ½ cup plant milk, 1 tbsp instant yeast, ⅓ cup water, 2 tbsp sugar, and 2 tbsp oil

  3. Add wet mixture to dry mix and knead for about 5 minutes, adding more flour if needed

  4. Cover dough and let rest for 1 hour

  5. Divide dough into 12 pieces and shape into balls

  6. Flatten the balls, brush one side with oil and clap

  7. Set up DIY steamer by placing a colander over a pot with boiling water

  8. Steam buns for 10-12 minutes

  9. Cut cauliflower into florets

  10. Mix 1 cup flour and 1 cup water with salt and pepper to make batter

  11. Coat cauliflower in batter and fry in hot oil for 5 minutes OR bake at 180°C/360°F for 25 minutes

  12. Heat gochujang, ketchup, agave syrup, brown sugar, light soy sauce, and sesame oil whilst stirring

  13. Pour sauce over baked cauliflower and toss

  14. Fill steamed buns with spicy cauliflower, tofu, cucumber, cilantro, and spicy mayo
