Refrigerate filling until ready to wrap
Add filling on the corner of spring roll wrap, roll halfway, fold in the two sides, roll all the way to the end and seal with egg wash
Preheat oil to 400°F
Fry spring rolls for 10-12 minutes until golden brown
Remove into a cooling rack
