Season pork well with salt and pepper
Sear hard on all sides in neutral oil
Remove pork and drain off fat
Add pork back to pot, add cider, stock, and seasonings
Bring to high simmer, cover and bake at 325f for 2.5 hours
Fry onions at 350f and season with salt
Add parsnip to pot and cover with cream
Simmer until the cream is thickened
Blend and season to taste
Once pork is out of oven, strain half of the sauce and simmer until thickened to desired consistency
Plate as seen, enjoy
