Sift flour through a sieve and transfer to a bowl. Add salt and stir the ingredients. Whip 1 egg and add it to the flour. Mix properly. Pour 1 cup of kefir and knead dough. You can add flour if necessary, but no more than 1 glass. The dough consistency should be stiff. Pour 3 tbsp of vegetable oil and continue to knead the dough. Now it should become elastic and homogenous. Keep in mind that the dough shouldn’t stick to your hands. Transfer the dough to a bowl, cover with a food wrap and set aside.
Now we will cook the chicken filling. Pour water in a pan, add chicken quarters, a peeled carrot, bulb onion and leek there. Boil the ingredients and salt them at the end of boiling. Then remove the root vegetables and cool the prepared chicken. Chop the meat finely and place it in a blender. Beat the mass till it gets the consistency of minced meat.
Peel a bulb onion, dice it and brown slightly. Add the onion and some oil to the ground meat and beat everything again. The mass should be like meat paste. Adjust salt and pepper to your taste. Divide the prepared dough into little balls and roll them out. Place the chicken filling in the center. Fold the dough over to cover the mixture and crimp the edges. Repeat the procedure until you use the dough and the filling.
Boil the chicken varenyky in salted water. Transfer them to serving plates and top with sour cream.
