Healthy Lemon Loaf
  1. Position your oven rack to the middle and pre-heat to 350 F. Line a loaf pan with parchment paper and set aside.

  2. To a large mixing bowl, add all dry ingredients. Whisk to combine, and set aside.

  3. To a new large mixing bowl, add all wet ingredients. Whisk until completely smooth.

  4. Add dry ingredients to wet ingredients. Gently mix until just combined, being careful not to over-mix your batter.

  5. Pour batter into prepared loaf pan, and spread to the edges if needed.

  6. Bake for 40-50 minutes or until a toothpick inserted into the center comes out mostly clean with just a few moist crumbs. The top should look golden brown and set, and lightly cracked.

  7. Let it cool in the pan for 15-minutes, then remove and transfer to a wire rack. Let it rest for a few hours or until it completely cools to room temperature.

  8. Meanwhile, prepare your glaze. Add powdered sugar and lemon juice to a small bowl and mix until smooth.

  9. Place your cooled loaf on a piece of parchment paper. Pour glaze over top, and spread to the edges. Let this rest for a few minutes until the glaze appears matte and set, then slice and enjoy!
