Cut the tofu in slices and fry in oil until golden brown.
Mix the soy sauce, vinegar, and maple syrup (or another sweetener).
Add the optional ingredients (ginger, scallion, garlic, chili, 5 spice) to the sauce mixture.
Add the sauce to the fried tofu and let it simmer for 5-10 minutes.
Enjoy with rice and steamed veggies.
