Ham & Bean Soup
  1. Soak the beans in water, covered by 3 inches, for 8-24 hours.

  2. Drain and rinse beans well.

  3. Add back to pot and add enough water to cover by 2 inches.

  4. Add the ham bone.

  5. Bring to a boil over medium high heat, skimming the foam off the top.

  6. Reduce to medium low and cook uncovered for 2 hours, stirring occasionally and continuing to skim the foam off the top.

  7. Remove the ham bone and set aside to cool.

  8. Add the onions, celery, carrots, and diced tomatoes.

  9. Add the diced or cubed ham.

  10. Add the seasonings and butter. There is no salt in this recipe because the ham itself is already quite salty - wait until the very end and taste before you decide to add any.

  11. Top off the water to the desired volume (or use chicken broth for additional flavor).

  12. Simmer for 30-60 minutes, until veggies are tender and the flavors have developed how you want. Taste and add more seasonings as needed.
