Cake
4 cups pancake mix
⅓ cup granulated sugar
¾ cup milk
2 eggs
½ cup sour cream
2 teaspoons vanilla extract
Crumb Topping
1 cup pancake mix
1 cup brown sugar
1 ½ teaspoons cinnamon
⅛ teaspoon nutmeg
⅛ teaspoon salt
½ cup (1 stick) softened butter
Icing
3 cups powdered sugar
⅓ cup butter
1 ½ teaspoons vanilla
1–2 tablespoons milk
Instructions
Preheat the oven to 350°F and spray a 9x13-inch baking dish with nonstick cooking spray.
In a large bowl, whisk together the pancake mix and granulated sugar. In a separate bowl, mix the milk, eggs, sour cream, and vanilla until smooth. Add the wet ingredients to the dry ingredients and gently mix just until combined—do not overmix. Set aside.
To make the crumb topping, mix all topping ingredients together until crumbly.
Pour the cake batter into the prepared baking dish and evenly sprinkle the crumb topping over the top. Bake at 350°F for 45 minutes to 1 hour, or until a toothpick inserted in the center comes out clean.
Let cool slightly, then drizzle with icing if desired
