Preheat oven to 425
Cut zucchini and shallot into large pieces and place in a casserole dish together with the garlic clove and pine nuts. Add olive oil Salt and pepper and mix untill coated. Bake for 20-30 min
While zucchini bakes boil pasta according to package instructions. Reserve ½-1 cup of pasta water
once zucchini is done remove from oven and add to a blender or large cup with immersion Blender.
add Creme Fraiche, parmesan, Basil and some pasta water. Salt and pepper to taste.
Plate pasta with sauce on top and enjoy!
