Zucchini Pesto Pasta
  1. Preheat oven to 425

  2. Cut zucchini and shallot into large pieces and place in a casserole dish together with the garlic clove and pine nuts. Add olive oil Salt and pepper and mix untill coated. Bake for 20-30 min

  3. While zucchini bakes boil pasta according to package instructions. Reserve ½-1 cup of pasta water

  4. once zucchini is done remove from oven and add to a blender or large cup with immersion Blender.

  5. add Creme Fraiche, parmesan, Basil and some pasta water. Salt and pepper to taste.

  6. Plate pasta with sauce on top and enjoy!
