Cut the red onion into strips.
If you have bone-in chicken thighs, debone the meat by slicing around the bone and removing it.
In a bowl, combine oyster sauce, light soy sauce, dark soy sauce, sugar, and chicken bouillon powder.
Place a steamer rack in a wok. Add a couple inches of boiling water, but stop before you reach the top of the steaming rack. Turn the heat to high.
Add oil to the bowl of marinated chicken and mix to distribute.
Use the residual oil in the wok or pan to cook the vegetables for this step.
