Baked Courgettes, Harissa, Chickpeas And Feta
  1. Turn your oven to 200°C/Gas 6 to preheat.

  2. Throw the chunks of courgette and chickpeas into a roasting tray along with the harissa, 2 tablespoons of olive oil, a good squeeze of lemon, and a seasoning of salt and pepper.

  3. Mix well and then nestle the block of feta into the middle of the tray.

  4. Zig-zag the feta with some olive oil and then drizzle over the honey.

  5. Pop into the oven and bake for about 30 -40 minutes, or until the courgettes are completely tender and the feta is browning on the top.

  6. Roughly mix the feta into the courgettes, and spoon it over whatever you've chosen to serve it on.

  7. Finish with fresh herbs, toasted almonds and lemon wedges for tweaking the acidity.
