One Bowl Lemon Blueberry Bundt Cake With Cream Cheese Icing
  1. Blend rolled oats into fine flour

  2. Mix dry ingredients: oat flour, almond flour, baking powder, baking soda, and salt

  3. In the same bowl, combine wet ingredients: eggs, maple syrup, honey, melted butter, buttermilk, lemon juice, lemon zest, and vanilla extract

  4. Toss blueberries with 1 tbsp oat flour

  5. Fold blueberries into the batter

  6. Pour batter into a Bundt cake pan

  7. Bake at 350°F for 50 minutes

  8. For icing: whip softened cream cheese with lemon juice, honey, and a dash of salt

  9. Ice the cooled cake with cream cheese icing
