Michael’s Herbaceous Iced Tea
  1. Bring the water, honey, juice and sugar mixture to a rolling boil; ensuring all the sugar is dissolved.

  2. Remove from heat and immediately add the zest and herbs and cover. Let steep 15 – 30 minutes. Remove herbs.

  3. In a 2L juice pitcher, add 4 bags of tea. Fill pitcher ¾ way with boiling water. Brew for at least 5 minutes.

  4. Add ALL the simple syrup to the tea while both are warm and stir well.

  5. Fill an ice cube tray with tea mixture and freeze.

  6. For serving: Add a slice of fresh lemon/lime and add tea cubes.
