Chocolate Raspberry Oatmeal Bars
  1. Preheat oven to 350 degrees. Line an 8x8" metal baking sheet with parchment paper and set aside.

  2. Add the butter, sugar and vanilla to a bowl and whisk to combine. Add in the flour, oats, and salt and stir to mix. Set aside 1 cup of the dough. Pour the rest into the prepared baking sheet and flatten into an even layer. Bake for 10 minutes.

  3. Remove from the oven and top with jam and sprinkle with chocolate chips. Crumble the remaining dough on top and sprinkle with almonds. Bake for 15-18 more minutes. Let cool completely before cutting into 16 bars.

  4. Store in an airtight container in the fridge and serve chilled or heated up.
