Add pasta, broth, garlic, broccoli, salt, and pepper to a pot.
Stir, bring to a boil, cover, then reduce heat to medium-low.
Cook 10–12 minutes until pasta is tender.
Stir in cheddar, monterrey jack, heavy cream, and milk until creamy.
Add a splash more milk if you like it creamier.
Option: broil a few minutes for a golden, crispy top.
