Cheesy Buffalo Chicken Burritos
  1. Add diced onions and sweet potatoes to a sheet pan

  2. Add salt and toss in the oven to bake

  3. Add diced chicken thighs, buffalo sauce, tomato paste, honey, Worcestershire sauce, butter and garlic powder to a bowl and mix

  4. Toss the chicken mixture in the oven to cook

  5. Add corn starch, Greek yogurt, and reduced fat cheddar cheese to the roasted vegetables and chicken

  6. Add diced green onions and mix until fully combined and thickened

  7. Top with reduced fat mozzarella cheese

  8. Toss in the oven and let sit for 10 to 15 minutes to cool

  9. Allocate portions evenly to burrito tortillas

  10. Roll each burrito and repeat 12 times
