Lemon Posset
  1. Start by mixing together your heavy cream and sugar in a medium sauce pan.

  2. heat this till a heavy simmer for 8 minutes, remove from heat and stir in lemon zest / juice.

  3. Transfer the liquid into your serving dishes or halved lemons. place in fridge for 30min - overnight.

  4. Add a small amount of sugar to the top of the lemon and using a blow torch toast the sugar.
