First, make your blueberry jam by heating frozen blueberries in a saucepan (do not add water). Once they reduce, add gelatin and simmer while stirring for 1 minute. Remove from heat and pour into a bowl and refrigerate while you prepare the rest.
Preheat oven to 375 F and place one puff pastry sheet on top of a lined baking sheet.
Spread out your cottage cheese on top of the pastry sheet, then layer with chilled blueberry sauce.
Cover with he other pastry sheet, slice, twist, then brush with an egg wash.
Bake in the oven for about 30 minutes or until you see them brown and puffed.
Allow to cool and enjoy!
