Heat up a pan on medium heat. Add the mince with the remaining ingredients and mix well.
While that cooks, add the soy sauce, sesame paste, vinegar, sugar, chilli oil and whisk well.
In a pot add the stock, milk and bring to a simmer. Cook the noodles with bok choy then set aside.
Add the soup base into ramen bowls then the milk/stock. Add the noodles, with the mince, bok choy. Garnish with spring onions, chilli oil and enjoy.
