Laffeh With Kafta
  1. Prepare the tzatziki sauce by squeezing liquid from 2 finely grated cucumbers

  2. Mix the grated cucumbers with yogurt, 1 minced garlic clove, salt to taste, and 1 tsp dry mint

  3. Prepare the herby salad by roughly chopping mint and parsley

  4. Finely slice Spanish onion and combine with the herbs

  5. Season the herby salad with sumac, salt, lemon juice, and EVOO

  6. Prepare kafta according to previous recipe

  7. Assemble the laffeh by layering fresh Lebanese bread with kafta, pickles, chilli, tzatziki sauce, and herby salad
