Crispy Rice Kale Salad
  1. Blend all of the dressing ingredients until smooth and creamy, adding enough water to make it pourable.

  2. Heat the oil in a large skillet over medium-high heat.

  3. Add the rice, soy sauce and chili crisp and mix together.

  4. Smash flat and cook until the rice is deeply toasted and crispy on all sides.

  5. Let cool slightly.

  6. Add the kale, cabbage, scallions, edamame, and peanuts to a large bowl.

  7. Pour over the dressing and toss until everything is evenly coated.

  8. Fold in the crispy rice just before serving so it stays crunchy.
