Ingredients:
Dressing:
Prep the produce: Dice tomatoes, cucumber, and avocado. Rinse and drain the beans.
Mix the salad: In a large bowl, combine garbanzo beans, black beans, tomatoes, cucumber, and onion (if using).
Make the dressing: Whisk together olive oil, vinegar or lime juice, garlic, cumin, salt, and pepper.
Toss and finish: Pour dressing over the salad and gently toss. Fold in avocado and herbs just before serving.
Chill or serve immediately. Best enjoyed fresh or within a few hours.

Note: if using guacamole instead of avocado, just add it last in place of dressing and use salt/pepper/olive oil/red wine vinegar as needed
