Steam the kale for 3–4 minutes until just tender but still bright green
If using sweet potato, bake the cubed sweet potato on parchment-lined baking sheet at 400°F for 20–25 minutes, or until soft and lightly golden
Warm the white beans in a small saucepan over low heat for 2–3 minutes, if needed
Add the kale, sweet potato, and white beans to a bowl. Toss gently with fresh lemon juice
Top with hemp hearts, cubed avocado, or a drizzle of extra virgin olive oil
Best served warm
