Mix together 100g active sourdough starter, 90g water, and 1 tbsp brown sugar until dissolved
Add 210g flour, 1 tsp salt, and 1 tbsp butter, then knead until smooth
Cover and let rise for 5 hours or until almost doubled in size
Divide dough into 3 equal pieces
Roll each piece into a 1 inch thick rope and cut each into 8 pieces
Preheat oven to 425 degrees F
Boil a pot of water with 1 tbsp baking soda
Drop dough bites into boiling water for 30 seconds, then remove onto a parchment-lined baking sheet
Sprinkle each bite generously with flaky salt
Bake for 12-15 minutes until golden brown
