Homemade Chipotle Chicken Bowls
  1. Add chicken to a bowl with oil, seasonings, and chipotle peppers; mix well

  2. Marinade for at least 2 hours

  3. Grill until internal temp is 165F

  4. Rest for 10 minutes before cutting

  5. Wash rice and add to rice cooker with broth

  6. Add bay leaf and cook

  7. Fluff and transfer to a bowl

  8. Add oil, half of the cilantro and lime juice, and 1 tsp of salt; mix well

  9. Taste the rice and adjust flavors if needed

  10. Wash beans and add into instant pot

  11. Add seasonings; mix well

  12. Pressure cook for 50 minutes

  13. Add salt, cilantro, and lime juice to taste for the pico de gallo

  14. Add salt, cilantro, and lime juice to taste for the corn salsa

  15. Add salt, cilantro, and lime juice to taste for the guacamole
