Pour ¾ cup of milk and ¾ cup of cooled brewed coffee into a bowl.
Then add the ¼ cup of chia seeds and ½ teaspoon of vanilla extract.
Stir the chia seed content with a spoon or fork for 30 seconds. Wait a few minutes, then stir again to avoid clumping.
Refrigerate for 6 hours or overnight or until pudding has formed.
Measure ¾ cup of Greek yogurt and place it in a small bowl.
Add ½ teaspoon of vanilla extract and 1 ½ tablespoons of honey or maple syrup or sweetener of choice; add more for more sweetness if desired, and mix with a spoon.
In a jar or cup, begin layering starting with chia seed pudding; the next layer add some of the Greek yogurt mix, then a layer of cocoa powder.
Continue layering, leaving the Greek yogurt to be the last layer, then heavily dust the top with cocoa powder. Enjoy or place back in the refrigerator covered to enjoy later.
