Preheat oven to 325°F.
Cream butter and sugar together in a stand mixer until light and fluffy.
Add eggs one at a time. Scrape bowl when finished adding the last egg.
Add vanilla and peppermint and mix together.
Mix flour, baking soda, salt and cocoa together in a separate bowl.
Add flour mixture to butter-sugar mixture.
Once combined, add in chocolate chips until incorporated.
Scoop 2.5-ounce balls onto a nonstick bake sheet and flatten halfway.
Bake 15 to 20 minutes, until light golden brown in color.
