Mix together your activated sourdough starter, lukewarm water and salt, mix together in a large bowl until combined
Add instant yeast and stir
Add the flour and mix with a wooden spoon or spatula until incorporated
Top with a little drizzle of olive oil and let it rest for 30 minutes with a towel over it loosely
Do 10-12 stretch and folds (look up a YouTube video if you are confused by this!)
Drizzle with a bit more olive oil to cover and cover again with a tea towel and place in a warm-ish place in your kitchen (if it's cold your dough will take a very long time to rise..) this could take 4-12 hours
It's ready when the dough has fully doubled in size and will look bubbly and light
Generously grease a cast iron pan and add 1-2 tbsp of olive oil to it
Oil your hands and deflate the dough and release it from the sides of the bowl
Move the dough into the center of the pool of oil in your prepared pan
Fold the dough envelope style from top to bottom and side to side to create a rough rectangle. Turn dough over so seam-side is down
Cover with olive oil and let rest in the same warm ish place for another 3-6 hours
Preheat oven to 425ºF
Coat hands with oil and using all fingers press into the dough to dimple until bubbles are evenly spread throughout the dough
Sprinkle generously with sea salt, I like to use Maldon. Or other toppings you love! Drizzle with a little more olive oil
Transfer cast iron to the oven and bake for about 25-30 minutes or until golden
Remove from oven and let Cool at least 15 minutes before slicing
