Boil the lemons in water for 1 hour, until soft
Once the lemons are cool, remove the centre/pulp and dice into 0.5cm squares
Peel the bramley apples and grate
Place all the ingredients except the brandy and sherry into a large bowl and mix well
Line a large tray with parchment paper and transfer the mix to the tray
Bake at 80°c for 3 hours
Leave to cool to room temperature
Put the mix back into the large bowl/container and mix thoroughly with the brandy and sherry
Transfer the mix into prepared sterilised jars and tap out the excess air
Allow to mature for 6-8 months
