Trinity Mince Pie Mincemeat
  1. Boil the lemons in water for 1 hour, until soft

  2. Once the lemons are cool, remove the centre/pulp and dice into 0.5cm squares

  3. Peel the bramley apples and grate

  4. Place all the ingredients except the brandy and sherry into a large bowl and mix well

  5. Line a large tray with parchment paper and transfer the mix to the tray

  6. Bake at 80°c for 3 hours

  7. Leave to cool to room temperature

  8. Put the mix back into the large bowl/container and mix thoroughly with the brandy and sherry

  9. Transfer the mix into prepared sterilised jars and tap out the excess air

  10. Allow to mature for 6-8 months
