Slice the fresh tomatoes, season with salt and pepper and leave on kitchen towel to soak up excess moisture. Microwave a few handfuls of spinach to wilt.
Break up the chicken sausages with your hands, add in chopped spring onion, the zest of one lemon, lots of chopped fresh basil and diced sun dried tomatoes. Shape into 4 patties around 1cm thick that will fit the muffin. Pan fry or air fry at 190c for around 4 minutes (2 minutes on each side) until just cooked, you don't want to dry them out when reheating
Slice the mozzarella in 4 pieces and cut the muffins in half.
Fill the muffins with a chicken patty, some sliced tomatoes, wilted spinach, a slice of mozzarella and season with salt and pepper. Wrap in foil and freeze until ready to use.
Let thaw overnight at room temperature and heat up either in the oven/ air fryer (for around 6 minutes at 190c) until the cheese is oozing or microwave.
