Oat Waffles
  1. In a medium saucepan, combine oats with 1¼ cups water. Bring to a simmer over medium heat and cook, stirring frequently, for 3 minutes. Remove from heat and stir butter into hot oatmeal until melted.

  2. Sift flour, sugar, baking powder, baking soda, and salt into a mixing bowl. In another bowl, combine eggs and buttermilk and beat lightly.

  3. Stir oatmeal into egg-milk mixture. Add oatmeal mixture to dry ingredients and stir just until well blended; do not overbeat.

  4. Preheat waffle iron until hot.

  5. Cook waffles according to waffle iron manufacturer’s directions, using about ¾ cup batter for each 8-inch waffle.

  6. Serve hot with butter and blueberry or black currant preserves.
