Grace's Chickpea, Sweet Potato, Quinoa Bowl
  1. Pre-heat oven to 200c.

  2. Add the sweet potato on a lined baking tray and add the olive oil, salt, pepper, onion powder and paprika. Toss to coat.

  3. Add the chickpeas to a lined baking tray and add the oil, salt, pepper, paprika and garlic/onion powder. Toss to coat.

  4. Place both trays in the oven (potato on top) and bake for 30-35 minutes.

  5. In the meantime, add the rocket to a bowl along with the lemon juice and combine.

  6. When the potago and chickpeas are ready, add the tahini in the bottom of the bowls, then top with quinoa, rocket, sweet potato, chickpeas, red onion, avocado, pomegranate and sesame seeds.
