Pickled Vegetables
  1. In a large saucepan, combine vinegar, water, salt, and sugar.

  2. Add garlic, chili flakes, mustard seeds, peppercorns, and bay leaves.

  3. Bring to a boil, stirring until salt and sugar dissolve.

  4. Remove from heat and let cool slightly.

  5. Pour the hot brine over the vegetables, leaving about ½ inch of headspace at the top.
