In a blender or food processor, combine cottage cheese, eggs, honey (if using), vanilla, and lemon zest. Blend until smooth and creamy.
Pour the mixture into a bowl, then stir in almond flour, baking powder, and salt until just combined. The batter should be thick but pourable.
Spoon or pipe the batter evenly into a greased or silicone donut pan. Bake at 350°F (175°C) for 15–18 minutes, or until golden and set.
Let cool for a few minutes before removing from the pan. Dust with a little powdered sweetener or drizzle with a light lemon glaze if desired.
