Vegetable Soup
  1. Place a large soup pot over medium heat and add the olive oil.

  2. Once simmering sauté the onions, celery, and garlic for about 5 minutes, or until translucent.

  3. Add in the rest of the ingredients, stir well to combine, and bring to a boil.

  4. Reduce to a simmer, and cook for 30 minutes.

  5. Taste and adjust for salt and pepper.

  6. Serve with freshly grated parmesan cheese on top and fresh parsley.
