Preheat oil to 350°F in a deep fryer or skillet with 3 inches of oil. Do not overfill.
Whisk together eggs, water, and buffalo sauce.
Sprinkle chicken with salt, garlic, onion powder, and pepper.
Mix flour with remaining pepper. Dip chicken in egg wash, then coat with flour.
Fry dark meat for 13–14 minutes, white meat for 8–10 minutes, until golden and 165°F internal temp.
Place on a wire rack, sprinkle with salt, and serve warm.
