Make a tea concentrate by boiling 4 cups of filtered water and steeping loose-leaf tea for 15 minutes.
Add cane sugar to the hot liquid and dissolve.
Strain out the tea leaves and add the sweet tea to a 1-gallon glass jar.
Add cool/cold water to dilute the tea.
Add starter tea and SCOBY to the jar.
Cover the jar with a tight-weave cloth and secure with a rubber band.
Let it sit at room temperature in a shady spot with airflow for around a week.
Start tasting the brew around the 5-day mark and continue until desired taste is reached.
