  1. Heat oil in a pan and cook sliced longganisa until browned and crispy, about 6-8 minutes. Set aside.

  2. Add oil if needed, crack eggs into pan, and cook to desired doneness. Season with salt and pepper. Set aside.

  3. Add more oil if needed, stir-fry rice for 4-5 minutes, breaking up clumps, until lightly toasted.

  4. Season rice with salt, pepper, and optional soy sauce. Mix well.

  5. Plate rice, top with egg and longganisa, and garnish with green onions. Serve immediately.
