Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8-inch (20cm) round cake pan with parchment paper or lightly grease it.
Mix Wet Ingredients: In a large bowl, whisk together the mashed sweet potato, milk, maple syrup, eggs, coconut oil, and vanilla until smooth.
Add Spices: Stir in the turmeric, cinnamon, ginger, and black pepper.
Combine Dry Ingredients: In another bowl, whisk together the almond flour, oat flour, baking powder, and salt.
Mix Together: Gradually add the dry ingredients to the wet ingredients and stir until just combined.
Bake: Pour the batter into the prepared pan. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
Cool & Serve: Let cool before slicing. Dust with a little cinnamon or drizzle with a light glaze if desired!
