Chicken Cordon Bleu

    Sauce

  1. Preheat oven to 350°F. Butterfly each chicken breast by slicing horizontally through the middle of the breast, taking care not to cut all the way through. Open the chicken up like a book.

  2. Lay the breast flat between 2 pieces of plastic wrap, use a meat mallet or rolling pin to pound the breast into an even layer.

  3. Sprinkle the chicken breasts with salt and pepper, place a slice of ham and Swiss between each breast, gently roll up the breasts.

  4. In a shallow bowl, combine breadcrumbs, Italian seasoning, onion powder, garlic powder, salt and pepper, set up a breading station with 2 shallow bowls, one of melted butter and another of breading mix.

  5. Dip the chicken breasts into the butter, and then roll in breadcrumbs until completely coated, transfer to parchment lined baking sheet.

  6. Bake the chicken for 35-40 minutes, or, until internal temperature reaches 165°F

  7. To make a sauce, melt butter in a sauce pan over medium heat, stir in flour, then slowly pour in milk while whisking. Add Dijon and Worcestershire, season with salt.

  8. Spoon sauce over Cordon Bleu, serve with sautéed green beans (see recipe). Serve.
