Chickpea Chocolate Chip Cookie Recipe
  1. Preheat oven to 350°F (175°C).

  2. Drain and wash chickpeas.

  3. In a food processor, blend the chickpeas, nut butter, maple syrup, vanilla, baking powder, baking soda, and salt until very smooth.

  4. Stir in chocolate chips.

  5. Scoop dough into 12 balls onto on a parchment-lined or lightly greased baking sheet.

  6. Gently flatten each ball with your fingers or the back of a spoon.

  7. Bake for 12-14 minutes, until edges are lightly golden.

  8. Let cool for 5–10 minutes before removing from the pan.
