Pistachio Chocolate-covered Scoops
  1. Blend until smooth: 1 cup coconut cream, ½ cup pistachios, ½ cup cashews, 5-6 pitted dates, 1 tsp vanilla extract

  2. Using a spoon or scoop, form small scoops of the mixture and place them on a tray lined with parchment paper

  3. Freeze the scoops for 2 hours or until firm

  4. Melt over low heat: 1 cup dark chocolate, A few drops of your favorite sweetener (optional)

  5. Dip each frozen scoop into the melted dark chocolate to coat evenly

  6. Sprinkle each scoop with: A pinch of sea salt, Finely chopped nuts or seeds (optional)

  7. Place the scoops back in the freezer for 10-15 minutes to let the chocolate harden
