In an oiled pan over medium heat, cook the diced red onion till soft.
Add in the sliced chorizo, followed by the minced garlic. Reduce heat to low and cook for another min.
Add in the tomato paste, smoked paprika, chopped cherry tomatoes and cook for another min.
Mix in ½ cup of water and cream cheese until well combined.
Lastly, add in the butter beans, spinach, chopped parsley, lemon juice and season with salt, black pepper and chilli flakes.
Simmer for 2 min until the spinach has wilted.
